Mimosa Jelly

Ingredients
40 gr mimosa flowers (the only edible part!)
1 sachet of 2gr agar-agar
1 lemon juice
125 gr sugar
1/2 liter of water
Preparation of the recipe
Sort the mimosa flowers and put them in a bowl
Cover with water brought to a boil
Cover and let steep for 1 hour.
Pass the infusion through a coffee filter, make sure to squeeze the flowers well to extract all the liquid
Pour the juice into a pot and add the sugar and lemon juice.
Heat again until boiling, stirring occasionally.
Boil the mimosa infusion and pour the previously diluted agar-agar in cold water.
Cook for about 8 minutes, stirring constantly
Then pour into previously sterilized jars, close and leave at room temperature.
